Hearty Crockpot Beef Stew

beef stew 1These last few nights have gotten a little chillier here in Georgia. We have welcomed the change from the warm snap we experienced the week of Christmas. The cold weather made me really want something warm and savory to eat, so this beef stew seemed like the perfect dinner. It’s easy to make and delicious. We served it with French bread and even Anna approved! Plus it is great leftover, which is awesome for nights like tonight when James is at work and I don’t feel like cooking. The recipe was one I found on Pinterest, check it out here. The first time I made this, I used cream of chicken soup instead of cream of celery, it turned out well both times. I mean I think any cream of “fill in the blank” soup  would work just fine. Also at my Kroger they have beef for beef stew already chopped in the meat department, which cuts down on prep time. Lastly, I only cooked mine fore about 5-6 hours on low and it was fine. So basically this recipe is a super easy wintery meal that really hit the spot for me.
