Easy Salmon Dinner

I use Pioneer Woman’s salmon recipe. It is full-proof and has never failed me. I recommend it to everyone because it’s easy and quick! Tonight we’re having it with mashed potatoes, spinach, zucchini, and mushrooms.

Salmon: 

drizzle olive oil over salmon on cookie sheet or pan top with salt and pepper

Put it in the oven and set to 400 degrees. Trick* don’t preheat! Cook for 20 min.

For the zucchini and mushrooms I drizzled with olive oil and 1 tbsp of balsamic. Topped with salt and pepper and stuck those in the oven too. (I put them on a separate pan because I am eyeballing them and not sure how long they’ll take)

Anyway the salmon is really the clutch main course when you are in a pinch and you can pair it with all sorts of yummy, yet simple sides!
